I'm still trying to understand why the theory of evolution shouldn't be applied to humans. 

Like many arguments we're used to, it's because people thinking that and not knowing how problematic that is will lead to Nazism and so on. It's a 4:40 long video with a large section whining about Harvard professors being mean to her in stories that might be totally made up:

It appears her disability is juvenile idiopathic arthritis based on another video, something which if I'm reading Wikipedia's entry correctly, 90% of people with grow out of almost naturally if it's not severe and in specific locations.
