I read that she has she/they pronouns at some point, but looks like she doesn't now.

Obviously fine if she did and changed her mind. Obviously fine if she doesn't and she doesn't need to share that part of her life either.

She seems great, and it would be nice if she is queer, as well as a super strong supporter of queer rights and a positive role model.

(And it seems like she's both!)
