It's not a pronouns joke, it's a joke about what's most important, namely that them got stabbed. It would be the same joke if them objected to the woman's statement by angerly saying there is no god, that's not really the most relevant thing at the moment. A pronouns joke would be like if the stabber said "my pronouns are ghost/face."

edit: Not that identifying as a ghost is any less valid.
