I still find myself stunned by the fixation on this specific Resident Evil character. They're treating RE lore like it's a timeless and fragile cultural touchstone, in danger of being shattered and lost forever.

Obviously I can just make fun of them like with everything else, but I am truly confounded by this specific fixation. 

Like, to highlight, when Yotei was coming out (or ACShadows...really anything with a female lead), no one was wringing their hands about "what if a man helps this strong independent woman...it would be the twilight of the gods!!!"

Also Grace has been from the start introduced as a FBI desk lady, why do they expect her to be the next Resident evil badass?

Exactly, Grace is a continuation of the RE7 and 8's change to have more vulnerable everyman protags instead of hyper competent anti-BOW world police types because that emphasizes the horror aspect. Having her get rescued at some point in the story isn't some horrific act of misogyny, she's quite literally not built for this stuff and that's the point.

The damsel in distress trope is a tried-and-true, thousand-year-old story device that's good because it taps into our very ancestral biology, and villainizing use of the trope has led to mass layoffs as people in the aggregate no longer care about modern stories as much as they used to.
