Yeah, needed a good hit on a super hot pan to get a bit of crust on the outside.

Yep and I didn't use quite enough butter.

Dust it with salt, pepper, and garlic powder. Stick it in the oven until one step below your preferred doneness, then quickly sear it on super hot pan.

Unless you're cooking on charcoal or a gas grill, but still pretty much the same thing.
